Depends on how you define 'horror films' - do Fu Manchu films count, for instance? Or horror spoofs? Or TV shows like Hammer House of Horror?

Anyway, I just counted them all, using arbitrary criteria I made up myself.

Christopher Lee - 50
Peter Cushing - 48
Boris Karloff - 46

Surprisingly, the other three prominent horror stars were much lower:
Bela Lugosi - 34
Lon Chaney Jr - 33
Vincent Price - 32

As for who'd win in a fight, Christopher Lee is still alive, which gives him a natural advantage. Even if they were all alive and in their prime I'd still go with Lee - the others either had drug or alcohol problems, or other long standing health issues. Apart from Vincent Price, but he was way too camp to be handy in a fist fight.
